Fooled Ya Instant Mashed Potatoes

Ingredients
  

  • 1 Cup Instant Potato Flakes
  • 1 3/4 Cup Half & Half
  • 1/2 Cup Mayonnaise
  • 1/2 Cup Real Butter
  • To Taste Salt & Pepper
  • 1/4 Cup Sour Cream, Optional

Equipment

  • 1 2 Quart Pot
  • 1 Spoon

Method
 

  1. In 2 quart pan, over medium heat, melt butter.
  2. Pour in half and half.
  3. Add Salt & Pepper. Do not bring to a boil.
  4. Add mayonnaise and stir until mostly dissolved.
  5. Add potato flakes and stir. Reduce heat.
  6. Continue stirring until mixture is smooth. If mixture is too thick, add more half and half a tablespoon at a time. Continue stirring.
  7. When you have the right consistency, taste and add butter, salt and pepper as needed.
  8. Add the optional sour cream.

Notes

The key steps to making instant mashed potatoes better than real, homemade mashed potatoes are stirring constantly to make them smooth, replacing water with half and half and using real butter.  Skimping on the half and half and butter will make the potatoes taste like paste.
